I just did this and experienced a few hitches, but ultimately succeeded.

Upgrading to Ubuntu 7.10 “Gutsy Gibbon” on Xen (http://www.pervasivecode.com/blog/2008/02/12/upgrading-to-ubuntu-710-gutsy-gibbon-on-xen/)
In particular you'll need to install libc6-xen to alleviate a whole mess of Segmentation Fault errors. Details on that are here (http://www.unixshell.com/forum/showpost.php?p=8458&postcount=6).
(That, and plenty of tedious hand-merging, which is typical of apt-based upgrades in my experience.)
